Basil pesto

Fresh, bright and versatile. A simple basil foundation that can become a sauce, spread or finishing touch.

A versatile Plant Base foundation.

Base ingredients

  • 2 packed cups fresh basil, stems removed
  • ⅓ cup pine nuts
  • 3 tablespoons nutritional yeast
  • 2 medium cloves fresh garlic, peeled
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • ⅓–½ cup extra-virgin olive oil
  • 1 tablespoon lemon juice, optional

Make it

Toast the pine nuts, if desired. Add the basil, pine nuts, nutritional yeast, garlic, salt and pepper to a food processor. Pulse until finely chopped but still textured.

With the processor running, slowly add the olive oil until the pesto reaches the consistency you like. Add the lemon juice, if using, and give it one final pulse.

Make it yours

Swap pine nuts for walnuts, pumpkin seeds or sunflower seeds. Add more garlic for a bigger bite, more lemon for brightness, or adjust the olive oil depending on whether you want a spread, sauce or drizzle.

Serve with

Pasta, roasted vegetables, sandwiches, grain bowls, beans—or spoon a little onto something that needs something.
