Hummus

A simple, creamy foundation that can become a dip, spread, sauce—or something completely different.

A versatile Plant Base foundation.

Base ingredients

  • 1 can (15 ounces) chickpeas, ¼ cup liquid reserved
  • 2 tablespoons tahini
  • 1½ tablespoons fresh lemon juice
  • 1 small garlic clove, crushed or minced
  • ¼ teaspoon salt
  • 1 tablespoon extra-virgin olive oil, plus more for serving

Make it

Drain the chickpeas, reserving ¼ cup of the liquid (aquafaba). Add the chickpeas, tahini, lemon juice, garlic, salt and olive oil to a food processor or blender. Blend until smooth, stopping to scrape down the sides as needed.

With the machine running, add the reserved aquafaba 1 tablespoon at a time until the hummus reaches the light, creamy consistency you like.

Transfer to a bowl and finish with a small drizzle of extra-virgin olive oil, if desired.

Make it yours

Start with the basic hummus and change the flavor by blending in roasted red pepper, cilantro and jalapeño, roasted garlic, harissa, olives or fresh green herbs.

Keep the basic batch neutral and customize smaller portions if you want several different flavors from the same foundation.

Serve with

Tortilla chips, fresh vegetables, crackers, naan, bread, olives or falafel. Use it as a sandwich or wrap spread, add it to a grain or vegetable bowl, or turn it into a simple pasta sauce. For pasta, thin the hummus gradually with warm pasta water until it reaches the consistency you like, then toss with the cooked pasta and serve.
